Sour asylum Series

Sour Ales

Inspired by the traditional German method of souring beers, we add a strain of Lactobacillus bacteria to the kettle to sour the wort during the brewing process. Our Sour Asylum Series allows us to experiment with different ingredients to balance the tart flavors in these beers.

SOUR ASYLUM | saporous

Saporous, defined as "capable of exciting the sensation of taste", is a passion fruit and guava lactose sour ale. This latest entry from our sour asylum series is bursting with fruit flavor and true to the definition of its name. Full bodied mouthful and a total juice bomb!

SOUR ASYLUM | smoke mountain

In order to speed up the annual drying of tea leaves in China’s Wuyi Mountain, long ago workers began drying leaves over fire made from local pines. We used the resulting smoked tea leaves, called Lapsang souchong, to add a unique smoke aromoa and flavor to our lacto-fermented sour ale.

More tart than sour and matured on blackcurrant and fresh rosemary, this tart dark ale has a distinct deep brownish plum color and aroma notes of rosemary, berries and roasted chocolate. The dark malts and blackcurrant combine to produce an underlying tannic structure similar to wine that adds complexity and balance to the light acidity and earthy sweetness. This unique experience ends with an aftertaste that is fresh, dry and sharply cleansing.
