Sour asylum Series

Sour Ales

Inspired by the traditional German method of souring beers, we add a strain of Lactobacillus bacteria to the kettle to sour the wort during the brewing process. Our Sour Asylum Series allows us to experiment with different ingredients to balance the tart flavors in these beers.

A black currant, pink guava, and Mediterranean sea salt sour ale.

SOUR ASYLum | Pometheus

Pometheus, a lacto-fermented sour brewed with pilsner and wheat malts and matured on fresh pomegranate and blueberry. Known to ancient traders as the “fruit of paradise”, the sacred pomegranate’s tartness and touch of sweetness are a delectable delight.

SOUR ASYLUM | saporous

Saporous, defined as "capable of exciting the sensation of taste", is a passion fruit and guava lactose sour ale. This latest entry from our sour asylum series is bursting with fruit flavor and true to the definition of its name. Full bodied mouthful and a total juice bomb!

SOUR ASYLUM | lazy sonker

Lazy Sonker gets its inspiration from the North Carolina indigenous and delicious soupy mess of fruit and crust known in most regions as "cobbler". Lazy Sonker is a sour blueberry sonker ale with a creamy mouthfeel and chewy flavors of lactose, cinnamon and vanilla.

SOUR ASYLUM | stawberry luxure

Strawberry Luxure is brewed with lactose and matured on strawberry puree and has a bold strawberry aroma and lush fresh strawberry flavors up front finishing moderately tart with a soft mouthfeel. The perfect Valentine’s Day beer!

SOUR ASYLUM | smoke mountain

In order to speed up the annual drying of tea leaves in China’s Wuyi Mountain, long ago workers began drying leaves over fire made from local pines. We used the resulting smoked tea leaves, called Lapsang souchong, to add a unique smoke aromoa and flavor to our lacto-fermented sour ale.

Sour Asylum | Lord Grey is a limited lacto-fermented sour brewed with Earl Grey tea that uniquely blends the sour ale's tartness with flavor and aroma notes of lavendar and bergamot.

Sour Asylum #12 | La Piña Gose is a German-style gose with pineapple. The salty tropical balance of sweet and tart provides perfect relief from the heat and humidity of July in Georgia.

SOUR ASYLUM | Blacklisted

Sour Asylum #11 | Blacklisted is our newest and one of the most unique releases from our series of lacto-fermented beers. More tart than sour and matured on blackcurrant and fresh rosemary, this tart dark ale has a distinct deep brownish plum color and aroma notes of rosemary, berries and roasted chocolate. The dark malts and blackcurrant combine to produce an underlying tannic structure similar to wine that adds complexity and balance to the light acidity and earthy sweetness. This unique experience ends with an aftertaste that is fresh, dry and sharply cleansing.

SOUR ASYLUM | BASILEUS

Sour Asylum #10 | Basileus [bey-zuhl aye us] which is Greek for king, is a lacto-fermented sour ale brewed with 100% pilsner malt and finished with fresh basil and cucumber. The sour tartness coupled with the clean and refreshing flavors of basil and cucumber make this beer a perfect companion for these last humid days of summer.

SOUR ASYLUM | Gose on my mind

Sour Asylum #9, Gose On My Mind, is our Peach State interpretation of the traditional German-style Gose. We add locally sourced peach juice from Lane Orchards in Peach County, GA for a subtle peach sweetness that balances wonderfully against the tartness from the lactobacillus and the salt character from our addition of Persian sea salt.

Sour Asylum #8 | Citron, is a tart, lacto-fermented sour ale brewed with 100% pilsner malt. Dry hopped with Galaxy, Citra and Amarillo this tart ale begins with citrus aroma and flavor and ends with a crisp and refreshing finish.

Sour Asylum | Sister Golden Sour

Sour Asylum #4 | Sister Golden Sour, the 4th in our series of lacto-fermented beers, is a pleasantly acidic, 5% golden sour ale brewed with 100% pilsner malt, soured with lactobacillus in the kettle and fermented with California ale yeast.

Sour Asylum | Oud Tannenbaum

Sour Asylum #3 | Oud Tannenbaum is the third in our ongoing series of lacto-fermented sour ales. Lactobacillus is added to the brew kettle lending a mild acidity to this brown ale. And in the spirit of this season when tinsel is hung and carols are sung around the Christmas tree, this tart brown ale is matured for weeks on cedar planks enhancing the dark malts and imparting a dry cedar character to the finish.
